At our Farm we are starting up a small Vertical Farm for Micro Greens.
Microgreens are vegetable greens, harvested just after the cotyledon leaves have developed.
They are used as a nutrition supplement, a visual enhancement, and a flavour and texture enhancement.
Microgreens can add sweetness and spiciness to foods and despite their small size, they pack a nutritional punch, often containing higher nutrient levels than more mature vegetable greens.
